Crab with Coconut Milk


This is alternative way to cook crabs. One of the best dishes here in Philippines. Hope you like it.

Ingredients:

6 pcs Crabs, cooked, with shells and claws intact, cut in half.
1 can Coconut Cream or 1 1/2 cupKakang Gata
1 Long Green Pepper or Siling Pang-sigang, sliced(optional)
3 cups Dried Taro Leaves or Dahon ng Gabi
4 cloves Garlic, minced
1 medium Onion, chopped
1 thumbsize Ginger, cut in rounds
2 tablespoons Shrimp Paste(Bagoong), bottled or sauteed
1 teaspoon Ground Pepper
Cooking Oil for sauteing

How to Cook:

  • Saute the garlic, onion, ginger and chili peppers in little oil.
  • Add the shrimp paste, taro leaves, and coconut cream. Bring to a boil.
  • Mix in the crabs and simmer until the taro leaves are softened and cooked, about 5-8 minutes.
  • Season with pepper, and serve hot with rice.

Sweet and Spicy Crab

Ingredients:

6 pieces Crabs, cut in half
2 pieces long chili peppers, sliced diagonally
1/3 cup butter, unsalted
1/4 cup cooking oil
1/2 cup brown sugar
1 thumbsize ginger, grated
2 teaspoon salt
1 teaspoon pepper
1/2 head of garlic, minced

How to Cook:

  • Pre-cook the crabs and cut them in half. Set aside.
  • In a wok or stir-fry pan, put the butter and cooking oil. Saute the garlic and ginger until the garlic is golden brown.
  • Add in the chili peppers, salt, pepper, and brown sugar.
  • Put in the crabs and stir-fry. Cover and cook for 10 - 15 minutes.
  • If the sauce is watery, remove the crabs and evaporate some of the liquid to make it thick.
  • Put the cooked crabs on a serving platter and pour the sauce on top.
  • Serve with rice. Enjoy..


Favorite Quick Fudge

Ingredients:

2/3 cups of milk, evaporated
1 ½ cup of sugar
¼ tbsp. of salt
2 spoon of butter
1 bottle of marshmallow cream (7.5 o.z)
½ cup of chocolate
1 tbsp. of vanilla
1 cup of peanut, grind


How to Cook:

  • In a Container: Put all together the following ingredients milk, sugar, salt, butter and marshmallow cream.
  •  Cook it with minimal heat mix continuously and let it boil. 
  • Remove from heat then add the chocolate peanut and vanilla. 
  • Pour in a container mold coated with oil. Let it cool.

Filipino Favorite Tapsilog

Ingredients:

Beef sirloin,1kg of this.
A whole bulb of garlic, minced finely.
3/4 cup of vinegar
1/4 cup white sugar
Salt, 1 tbspn.
Same with pepper, 1 tbsp.
Garlic fried rice:
2 cups of day old rice.
5 cloves of garlic
Green onions, chopped.
Salt and pepper to taste.
1/2 a small onion.

How to Cook:

  • Put all the ingredients together in the meat marinade mix except the meat in a big container or a zip lock. Mix well, then add meat. Let it marinate for 2 days for best flavor, or 30 minutes if you want to be fast.
  • When done marinating, fry the meat in a pan. Set aside.
  • Make garlic fried rice in same pan. Fry the garlic first, then onions, then rice, add seasonings and garnish with S&P.
  • Serve with an egg of your choice on the side. 
  • Enjoy..

Crab Cake

Ingredients:

1/3 cup dry bread crumbs
1/4 green bell pepper, seeded and diced
1/4 red bell pepper, seeded and diced
2 green onions, thinly sliced
4 sprigs fresh parsley, chopped
1/2 teaspoon hot pepper sauce
1 egg white
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
1/4 teaspoon Old Bay TM seasoning
1/4 teaspoon dry mustard
1/4 teaspoon onion powder
3 (6 ounce) cans crabmeat, drained and flaked
1/2 cup dry bread crumbs
1 cup canola oil for frying

How to Cook:

  • In a bowl, toss together the 1/3 cup bread crumbs, green bell pepper, red bell pepper, green onions, and parsley.
  •  Mix in the egg white, mayonnaise, lemon juice, Worcestershire sauce, and Dijon mustard.
  •  Season with Old Bay seasoning, dry mustard, and onion powder. Fold crab meat into the mixture. Form into 6 large cakes. Coat in the remaining 1/2 cup bread crumbs.
  • Heat the oil in a large, heavy skillet. Fry the cakes 5 minutes on each side, or until evenly brown. Drain on paper towels.

Black Tea Lemonade

Ingredients:

5 cups water
1/2 cup white sugar
3 orange pekoe tea bags
1 (12 ounce) can frozen lemonade concentrate
5 cups water

Procedure:

  • Bring 5 cups of water and the sugar to a boil in a saucepan, then remove from the heat and add the tea bags. 
  • Allow tea to steep while you mix the lemonade concentrate and remaining water in a large pitcher. 
  • Pour the tea mixture into the lemonade, discarding tea bags. Stir and refrigerate until cold before serving.

Golden Drink's

Ingredients:

½ cup of kalamansi juice
½ cup of sugar or 1 pcs. of cold concentrated lemonade, in can
¾ cup of cold water
2 pcs. of dalanghita juice
1 cup of cold apricot nectar, in can
1 cup of ginger ale

Procedure:

Mix all ingredients well. It can make up to 8 glasses.

Ensaladang Avocado

Ingredients:

1 pack or sachet of lime jello
1 cup of hot water
½ cup of celery, chopped
½ tbsp. of salt
½ cup of mayonnaise
1 tbsp. of onion juice
2 cups of avocado, chopped like cube
1 cup of all purpose cream

How to Cook:

Melt the jello using hot water then add the remaining ingredients. Mix it well. Pour it in container mold. Let it cool and serve it.

Heather's Grilled Salmon

Ingredients:

1/4 cup brown sugar
1/4 cup olive oil
1/4 cup soy sauce
2 teaspoons lemon pepper
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon garlic powder
4 (6 ounce) salmon fillets

How to Cook:

  • Whisk together the brown sugar, olive oil, soy sauce, lemon pepper, thyme, basil, parsley, and garlic powder in a bowl, and pour into a resealable plastic bag. 
  • Add the salmon fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 1 hour, turning occasionally.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the salmon from the marinade, and shake off excess. Discard the remaining marinade.
  • Grill the salmon on the preheated grill until browned and the fish flakes easily with a fork, about 5 minutes on each side.

Grilled Marinated Shrimp

Ingredients:

1 cup olive oil
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
skewers

How to Cook:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. 
  • Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

Sinigang na Hipon Filipino (Shrimp Stew)

Ingredients:

1/2 Kilo Shrimp
12 pcs. Tamarind (Sampaloc) or 1 pack Sinigang Mix
1 big Onion (diced)
3 big tomatoes (quartered)
2 pieces Radish (sliced)
1 bundle Sitaw (Strringbeans)
1 bundle Kangkong (cut into 2″ long)
3 pieces long green pepper
5 cups ricewash or water
Salt or Patis (fish sauce)

How to Cook:

  • Boil Tamarind in rice wash or water to soften.
  • Pound and extract all juices and set aside.
  • In a casserole, boil rice wash or water, Tamarind juice, onions, tomatoes and Radish.
  • Lower fire, add in Shrimps, Kangkong, Sitaw and green long pepper.
  • simmer for 5 minutes.
  • Season with salt or patis.
  • Serve hot.


Sinigang na Bangus (Milk Fish Stew)

Ingredients:

1 piece large bangus, cleaned and sliced into serving pieces
2 pieces tomatoes, quartered
2 medium eggplants, cut into serving pieces
5 pieces string beans, cut into serving pieces
2 cups kangkong leaves
1 teaspoon salt
1 small ginger, sliced
1 medium onion, sliced
5 cups water
1 small pack tamarind powder

How to Cook:

  • Bring water to a boil together with the ginger in a casserole.
  • Add the bangus, tomatoes, and onion and simmer for 10 minutes.
  • Add the tamarind powder and salt to taste.
  • Add the eggplant and string beans and simmer for another 5 minutes.
  • Remove from heat, add the kangkong leaves, and let stand covered for 5 minutes.
  • Serve hot.

Grilled Salmon with Habanero Lime Butter

Ingredients:

1/4 cup vegetable oil
1/2 cup orange juice
3 tablespoons lime juice
1 tablespoon tequila
1 tablespoon grated lime zest
1 tablespoon minced habanero pepper
1 clove garlic, minced
4 (5 ounce) salmon steaks
1/4 cup butter, softened
1/4 teaspoon garlic salt
1 tablespoon lime juice
2 teaspoons minced habanero pepper
2 teaspoons grated lime zest

How to Cook:

  • In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. 
  • Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. 
  • Cover, and refrigerate for 2 to 4 hours, turning frequently.
  • In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.
  • Preheat grill for medium heat.
  • Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter, and serve.

Maple Salmon

Ingredients:

1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 pound salmon

How to Cook:

  • In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  • Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Mandarin Soup

Ingredients:

1 cup of gluten
1 tbsp. of cooking oil
1 cup of mushroom, chopped
½ cup of carrot cut it like small cubes
1 cup of celery
6 cups of water
3 tbsp. of margarine
1 egg, beaten
¼ cup of water

How to Cook:

  • Chop the gluten into strips. Put the cooking oil into pan and sauté the gluten for 5 minutes. 
  • Add the mushroom, carrot, and celery; sauté for another 5 minutes. 
  • Add the water; let it boil. Add the egg while mixing then put some salt for the taste.

Corn Soup

Ingredients:
2 table spoon of butter
1 onion large, slice
2 cups of water
2 potato, sliced
2 pcs. of celery with leaves, chopped1
½ tbsp. of salt
2 pcs. of corn, in can d
2 cups of milk, evaporated

How to Cook:

  • In a fan, melt the butter then add the onion. Put the water, salt, and potato. 
  • Cook until potato become tender. 
  • Add corn and milk and cook for another few minutes. Spread the parsley on top then serve it while hot.

The vitamin and mineral needed in our body

        Aside from the water we drinking and the air we hailing, the food is important needs in our life. Food is needed to become healthy and good.

        The carbohydrates are simple sugar or vitamin that can be a simple sugar in the form of hydrolysis or water mixing. The main use of it is to give strength to our body. Every gram of carbohydrates that our body burning giving four calories. Some of typical foods that rich in carbohydrates are sweet potato, bread, cake, biscuits, rice, potato and our typical sugar.
The protein is composing of elements that carbohydrates also have but the difference is it has a nitrogen or even sulfur sometimes. The main usages of proteins have a big factor about the growth and building of our body. It also gives strength in four calories in every gram. Although protein is expensive it is not the main source of strength in our food. Those are egg, fish, meat, milk, and seed like beans and legumes and nut of peanut etc.
In all mineral that gives strength, the fat is the one who gives us a lot. It gives nine calories in every gram of fat that our body burned. It also gives a good taste in our food. These are the food that rich in fat cooking oil, margarine, avocado, egg yolk and coconut.

       The vitamins are the group of good minerals that can get slowly and we need its important uses in different part of our body.
